Cheers! Cocktails that come on a stick from Bath entrepreneur

The sound of an ice cream van is synonymous with the summer.

But instead of buying a Callipo or Twister, adults looking to cool down this year could well be getting their mouths around something a little stronger.

An entrepreneur from Bath is hoping his new cocktail ice lollies will be this summer's craze at parties, weddings and food fairs.

Mixologist Crispin Shingler, 38, has launched Coba Cocktails which has turned several classics, such as the Margarita, White Russian and the Cosmopolitan, into an ice lolly.

"When I was working as a mixologist in London I had lots of ideas thinking about different ways to serve cocktails.

"I wanted to open up a bar and thought a good way to promote it and entice people inside would be to hand out cocktails. I was quite naive and quickly realised I wasn't in a position to open a bar but the cocktail ice lolly idea was still there."

Over the last eight months, locked away in a small workshop in the centre of Bath, Mr Shingler has been perfecting the recipes, with the help of his fiancée Suzi Gammon.

"It's been fun playing around with flavours and working out how to freeze alcohol."

Mr Shingler, who in his spare time trains the under-11 squad at Bath Cricket Club, has already received positive feedback from other businesses in the city and is now on the look-out for bigger premises, which would enable him to handle large orders and hire staff.

"I am already looking at the next stage of the business. The obvious place to get into would be ice cream – we already thinking of a range for the winter, but that's in the really early stages."
